What makes hotel kitchens different
A hotel rarely has one kitchen. There may be a main line, a banquet kitchen, a breakfast or cafe line, a bar kitchen and a staff cafeteria, each with its own hood and sometimes its own duct and fan. A quote needs to say which of those are covered.

It depends on the number of systems and crew size. Many properties split the work across nights so at least one line stays open. Ask the provider to propose a plan.
Do providers work around banquet schedules?
Scheduling is set by each independent provider. Share your event calendar and blackout dates in the request.
