How to Prepare Your Kitchen for Hood Cleaning

A little preparation makes service night faster and avoids a rough opening the next morning. Use this checklist with your provider's own instructions.

BEFORE THE CREW ARRIVES

The day of service

  • Confirm the arrival time and who will let the crew in and lock up
  • Turn off cooking equipment early enough for it to cool
  • Clear the line: remove food, utensils, pans and small equipment from under and around the hood
  • Move or cover anything on shelves near the hood
  • Make sure there is clear access to the roof, electrical panel and a water source
  • Tell your alarm company or building manager if needed

Ask your provider in advance whether pilot lights need to be shut off and who relights them. Do not assume.

ACCESS

Sort out the building

In a shared or multi-story building, access causes more delays than the cleaning itself. Before service night, confirm:

  • How the crew reaches the roof and who has the key
  • Where they can park and bring in equipment
  • Whether neighbors or the landlord need notice
  • Whether any ceiling or duct access panels are blocked by storage

BEFORE THEY LEAVE

What to check at the end

  • The hood and filters are back in place and the line is wiped down
  • The exhaust fan is running normally
  • A dated service sticker is on the hood
  • You know when to expect the written report and photos
  • You have been told about anything that could not be cleaned or needs repair

How long should equipment cool before cleaning?

Follow your provider's instructions. Crews need surfaces cool enough to work safely, so plan to shut down well before they arrive.

Do I need to be there during the cleaning?

Someone with authority to open the building and sign off should be reachable. Many providers ask for a manager at the start and end of the visit.

Can we cook right after the cleaning?

Usually yes, once the provider confirms the system is reassembled and the fan is running. Ask them before relighting equipment.
